French Toast Casserole
Ingredients and Directions
10-12 slices of day old French bread
2 cups whole milk
12 eggs beaten
1/4 cup maple syrup
8 ounces cream cheese cubed
2 teaspoons vanilla
cinnamon, nutmeg, sugar
Preheat oven to 350 degrees
Butter a 9x14 casserole dish
Layer cubed bread evenly in pan
Combine milk, eggs, vanilla
Pour over bread
Drizzle syrup evenly over mixture
Top with small cubes of cream cheese
Sprinkle cinnamon, sugar, and fresh nutmeg
Bake at 250 degrees for 1 hour
Roasted Tomato Vinaigrette
Ingredients and Directions
5 very ripe Roma Tomatoes
3/4 cup olive oil
Kosher salt
Ground pepper
1/4 cup balsamic vinegar
5 cloves garlic
2 tablespoons fresh basil
2 tablespoons fresh parsley
Cut the tomatoes in half and toss in a small
amount of olive oil.
Season with salt and pepper.
Place on a hot grill skin-side down or broil skin side up until the skin has become
blistered and slightly charred.
Set aside and cool.
In a food processor combine the tomatoes, vinegar, garlic, and herbs and puree.
On slow speed add the olive oil in a steady stream. Season with salt and pepper.
Holiday Sweet Potato Casserole
Ingredients and Directions
3 cups cooled mashed sweet potatoes
1/2 cup sugar
1/2 cup butter, softened
1 tablespoon vanilla extract
2 eggs
1/2 cup firmly packed brown sugar
1/2 cup all purpose flour
1/3 cup butter
1 cup nuts
In a large bowl, beat the mashed potatoes, sugar,
softened butter, vanilla, and eggs.
Place in a greased 11/2 quart casserole.
In a small bowl, combine the brown sugar, flour, 1/3 cup of butter and nuts.
Mix the topping with fingers and sprinkle over the potatoes.
